Potato salad recipe:

Ingredients:
18 medium yukon gold potatoes (about 6 pounds)
3 - 3.5 cups of mayonnaise
3 tablespoons of white vinegar
3 tablespoons of olive oil
3 teaspoons of salt
1 teaspoon pepper
2 medium chopped onion (about 1.5 cup)
6 medium celery stalks, chopped
12 hard boiled eggs chopped

Boil potatoes until soft (about 30 to 35 minutes). Fork tender, avoid over cooking.
Let cool before peeling.
Peel potatoes then cut into 1 inch cubes in a bowl.
Add to potatoes: chopped celery, onions, and eggs and mix.
Add salt, pepper, vinegar and olive oil.
Add mayonnaise to all the ingredients. Adjust the amount as needed.
Refrigerate for at least 2 hours.
