Almonds, How do I love thee?

I haven't always had a close relationship with almonds, but our connection has grown over the years and now I cannot imagine my life without them.

First, several families who are dear to us have a family member with Celiac disease and/or a gluten allergy. Fortunately, almond four is an excellent and tasty substitution for white four in many entrees and desserts, so we can all still share delicious meals together.

Second, I was given two adorable children who cannot eat peanuts or tree nuts, but for some reason, they can have almonds. For that reason alone, we love almonds. An almond butter and jelly sandwich is so much more delectable than just a jelly sandwich.

Finally, in addition to being an excellent alternative for those with peanut and gluten allergies, almonds and almond flour are good for the body. Almonds are high in protein, low in sugar, and rich in vitamins.

One of my all time favorite almond recipes that was created by our very own Director of Outreach and Engagement, Maureen Witmer, is Flourless Chocolate Cake with Raspberries and Cream. If you want to make a friend feel special, you must make this dessert for them.
