An Easy Paleo Meal
The Paleo diet is a popular diet that allows users to enjoy only the foods that would have been eaten during the Paleolithic era (about 40,000 years ago). It consists mainly of foods that could have been found by hunters and gatherers- meat, fish, nuts, seeds, oils, fruits and vegetables. People following the Paleo diet do not eat processed food or foods that contain dairy, sugar, grains, legumes, or potatoes.
We are seeing more and more requests for this special diet on meal schedules, so we wanted to give you an easy meal idea. We also have a few others in our recipe section. Now when you see the word Paleo on a meal schedule you're participating in, you will have no need to fear.

An Easy Paleo Meal

Burrito bowls are a special meal to my family. After my son was born, we spent 35 days in the hospital. It was the hardest time of my life but filled with unexpected blessing. One of those blessings was an acquaintance who drove an hour each way to bring us dinner one night, and the meal he brought was burrito bowls. It was so tasty and fresh (anything is better than hospital food!), and I loved how we could all make ours according to our own preferences. He transported all the elements in plastic bags but you could also use smaller foil pans from the dollar store.
I love so many things about this Paleo-friendly meal. It's incredibly flavorful, easy to prepare, filling, and requires no special ingredients (don't be intimidated by cauliflower rice. It's easy to find at all grocery stores). This is an excellent choice to take to a family where maybe only one or two people are following a special diet, i.e. kids can add cheese and sour cream, but I personally think this is perfect as written.

An Easy Paleo Meal

Chicken Burrito Bowls (Paleo, Whole 30 and Keto)
From Real Simple Good
Seasoning:
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp sea salt
  • 1/2 tsp ground pepper
Chicken:
  • 1 tbsp olive oil
  • 1.5 lbs boneless chicken thighs
For the bowls:
  • 6 cups spinach (or greens of choice)
  • 1/4 cup cilantro, chopped
  • 1/2 red onion, finely diced
  • 1 lime, cut into wedges
  • 2 avocados, diced
  • 1/4 tsp garlic powder
  • 4 cups cauliflower rice
  • 1/4 cup salsa
  • 1 tbsp olive oil
  • Salt and pepper
Directions:
  1. Mix the seasoning together and season both sides of the chicken.
  2. Heat the olive oil in a pan over medium-high heat. Cook chicken 5-6 minutes per side until no longer pink. Slice into strips.
  3. Once the chicken is cooked, use the same pan to cook the thawed cauliflower rice and salsa. Cook 3-4 minutes until rice is soft and warm.
  4. To prepare the guacamole, mash together avocados, red onion, garlic powder and 1/2 a lime.
  5. Package individual ingredients or assemble the bowls. Start with a bed of greens, and add sliced chicken, cauliflower rice, guacamole, diced cilantro, and garnish with limes.
  6. Delicious when served with Siete Grain Free Tortilla Chips, found at many grocery stores, like Wegmans, Thrive Market and Whole Foods.

Paleo Almond Fudge Cups
From Paleo Running Momma
  • 1 and 1/2 cups smooth almond butter
  • 1/4 cup + 1 tbsp raw honey or maple syrup
  • 1 tsp pure vanilla extract
  • 1/2 cup coconut oil, melted and then cooled to almost room temperature
  • Generous pinch of fine grain sea salt
  • 2/3 cup chopped raw almonds
  • Pinch more sea salt to top
Directions:
  1. Line a muffin pan with cupcake liners
  2. Cream together almond butter, honey or maple syrup and vanilla extract. Whisk in cooled coconut oil until smooth. Stir in chopped almond and sea salt.
  3. Spoon mixture into liners. Freeze for 15 minutes and enjoy.
