April's Celebrity Meal Provider: Audrey at Mama Knows Gluten Free
Cooking for yourself or your family when someone has a food allergy or sensitivity is hard. It's not impossible, but many recipes are already ruled out because they include ingredients that cannot be used. Even harder, in my opinion, is taking a meal to a friend or family who has a specific allergy or sensitivity that you usually don't consider when preparing your own meals. This month's celebrity meal provider is going to be a great resource for those times when you need to prepare a gluten-free meal and you want it to be delicious!
Gluten is a protein found in grains like wheat, barley, and rye. Some people are sensitive to gluten, some are allergic, and for some with Celiac disease it causes an autoimmune response. Whatever the reason is for avoiding gluten as an ingredient in a meal, Audrey Roberts at Mama Knows Gluten Free is your go-to expert for delicious, tested recipes. She shares many gluten-free, dairy-free, and Paleo recipes on her blog. Audrey's The Everything Gluten-free and Dairy-free Cookbook, is a bestseller on Amazon.
I prepare meals without gluten for my own family (and I had some aging bananas on the counter), so I decided to try Audrey's Paleo Banana Blueberry Muffins recipe from her site. All of the ingredients were available in my kitchen and stocked in most grocery stores. They did not disappoint! The best part was we could use them for breakfast the next day. And, if your family doesn't gobble them up, they can also be frozen and saved for later.

1. What is your go-to recipe when taking a meal to a friend?
My go-to recipe for taking a meal to a friend is my Crispy Chicken Thighs One-Pan Meal. It's a super easy one-pan meal of roasted chicken, potatoes, and vegetables. A simple spice blend gives tons of flavor to the crispy skin and the juicy thigh meat. This recipe is in the oven in just minutes for a delicious and budget-friendly main dish. We are a food allergy family and this meal is one of my family's favorites. It's naturally gluten-free, dairy-free and is also perfect for those following AIP, Paleo, and Whole30 diets.
2. What do you send along with the recipe? Any sides or desserts?
This meal already includes the side dish, but you can always substitute rice or quinoa to go along with the chicken thighs in place of the roasted potatoes and vegetables.
I am a firm believer in always serving dessert! I like sending a pan of my Gluten-Free Brownies for dessert. I've never known anyone who does not enjoy a fudgy brownie.
3. What containers do you use to take this meal?
Cross-contamination is always a major concern for those that have Celiac, food allergies, or food sensitivities. I always recommend using disposable aluminum pans when cooking or baking for friends with Celiac, food allergies, or food sensitivities. They are a great bake-and-take option that can be easily covered with foil.
4. What inspires you to faithfully take meals to others and how does that align with your work on Mama Knows Gluten Free?
Cooking and baking are two of my love languages! So, helping others by cooking them a home cooked meal brings me so much joy. I also know how hard it is for those with food restrictions to have a regular meal and often restaurants are not a safe option for their family. I love sharing the recipes I make for my family and helping others. That is the whole reason I started Mama Knows Gluten Free.
For years, I've shared my recipes not only with friends and family, but also with people who would ask me questions in the grocery store when they saw me buying gluten-free items. Most of the people I encountered at the store were newly diagnosed and just starting on their gluten-free journey. I would email them my recipes and try to help answer questions they might have. My husband encouraged me to start a recipe website so I could have all of my recipes in one place to help people. So that's the story of how Mama Knows Gluten Free all started. I am so very blessed that others have trusted me and my recipes to be part of their gluten-free journey. It is truly the honor and privilege of a lifetime.
