Notes from Sue Poyner . . . Welcome to July's Meal! It's a sweet thing to do this together! Thank you for joining in! Recipe for July Hot Chicken Sandwiches: 3 lbs. boneless skinless chicken breasts 1 C stuffing mix 1 sleeve Ritz crackers, crushed 2 cans Cream of Chicken soup Chicken broth or water, as needed 1. Place chicken in slow cooker, and pour soup over the top. 2. Cover and cook on low until chicken is easily shredded (3-4 hours) 3. Shred chicken, then stir in stuffing mix and crushed crackers. 4. Cover and cook for 30 min. more till all is soft. 5. If needed, thin mixture out with chicken broth.
