My Mom's Graham Cracker Toffee
Some of the best family recipes are not written down. Growing up, my mom always made the most delicious graham cracker toffee during the fall and holiday seasons. I never once saw her looking at a recipe card and she made them on a whim whenever the need arose. When I got married, I asked her for the recipe and she simply recited it to me while I wrote it down. It's been years since I've made these cookies, but when my daughter signed our family up to bring dessert for our church's midweek gathering, I knew right away which dessert we would make.
This dessert is simple because there are only four ingredients: graham crackers, brown sugar, butter and semi-sweet chocolate chips! There is no need for mixing, whipping or spooning anything onto cookie sheets. They come together quickly and are always a big hit wherever we share them. This week was no different. We brought three plates full of toffee to church and every single piece was enjoyed!
I found the exact recipe online when I couldn't find my recipe card. Here's how you can make this Easy Graham Cracker Toffee for your family or friends the next time you wonder what sweet treat you can bring.
INGREDIENTS
  • 15-regular graham crackers
  • 2 cups of semi-sweet chocolate chips
  • 1 cup (or two sticks) unsalted butter
  • 1 cup of light brown sugar, firmly packed
  • chopped pecans or almonds (optional)
DIRECTIONS
  1. Spray a cookie sheet with oil of choice and lay down a sheet of parchment paper. Spray the parchment paper once more.
  2. Line a cookie tray with 15 graham crackers (or however many will fit)
  3. In a small saucepan, bring the brown sugar and butter to a gentle boil and simmer for about 2-3 minutes being careful to not let it burn.
  4. Pour mixture over the graham crackers and bake at 350 degrees for about 8 minutes.
  5. Remove from the oven and sprinkle the semi-sweet chocolate chips, allow to rest for 2 minutes to melt the chocolate.
  6. Once soft, spread the chocolate evenly over all the cookies.
  7. Optional: sprinkle with chopped pecans or sliced almonds!
  8. Allow cookies to cool by leaving the cookie sheet on the counter, or you can quickly set them by refrigerating them for an hour.
  9. Gently cut the cookies into 2 inch squares and enjoy!
My mom shared with me that she received this recipe from a close friend who loved participating in cookie exchanges. What I love most about tasting this treat are the memories entangled with them. I'm reminded of how so many recipes we use and share are inspired by family heritage and friendship across generations. We bring them to each other in love and they often have their own stories to share. It is such a blessing to continue our traditions when we share meals with one another. You're not just taking a meal, but you're extending your family's love to another through food.
